Barack Obama Shares Pre-Presidency Concerns With Barbara Walters

President elect Barack Obama In a new interview with Barbara Walters, President-elect Barack Obama reveals some of his concerns about transitioning into his presidency.

For national security reasons, Obama may have to give up use of his BlackBerry, as well as other electronic methods of communication -- something he says seriously concerns him.

"One of the things that I'm going to have to work through is how to break through the isolation -- the bubble that exists around the president," Obama tells Walters. "I'm in the process of negotiating with the Secret Service, with lawyers, with White House staff … to figure out how can I get information from outside of the 10 or 12 people who surround my office in the White House."

Obama went on to say he enjoyed his widespread interaction with Americans while he campaigned for the presidency across the nation, but he fears losing that contact.

"One of the worst things I think that could happen to a president is losing touch with what people are going through day to day …" he tells Walters. "I want to make sure that I keep my finger on the pulse of the struggles that people are going through every day."

"Barack Obama: The Barbara Walters Interview" airs Wednesday night on ABC.

Healing the Planet with Earth-Friendly Bamboo Products

Jackie Heinricher's love affair with bamboo started in her backyard. "As a child, I remember playing among the golden bamboo my dad had planted, and when there was a breeze, the bamboos sounded incredibly musical. It was my magic fort area."

A fisheries biologist by training, Heinricher, 47, planned to work in the salmon industry in Seattle, where she lived with her husband, Guy Thornburgh, but she found it too competitive. Her garden gave her the idea for a business: She'd planted 20 bamboo groves on their seven-acre farm and had had some success propagating noninvasive clumping bamboos-the ones for small gardens (not the notorious runners that grow two inches an hour and take over the landscape).
Heinricher started Boo-Shoot Gardens in 1998. She realized early on what is just now beginning to dawn on the rest of the world: Bamboo is incredibly versatile as well as very earth-friendly. It can be used to make fishing poles, skateboards, buildings, furniture, floors, and even clothing and bed linens (the fabric is as soft as silk). An added bonus: Bamboo absorbs four times as much carbon dioxide as a stand of hardwood trees and releases 35 percent more oxygen. If Heinricher could use her green thumb to advance a green cause, even better.

First she had to find a way to mass-produce the plants—a tough task, since bamboo flowers create seed only once every 50 to 100 years. And dividing a bamboo plant frequently kills it.

Heinricher appealed to Randy Burr, a tissue culture expert, to help her. "People kept telling us we'd never figure it out," says Heinricher. "Others had worked on it for 27 years! I believed in what we were doing, though, so I just kept going."

She was right to feel a sense of urgency. Bamboo forests are being rapidly depleted, and a United Nations report showed that even though bamboo is highly renewable, as many as half of the world's species are threatened with extinction. Heinricher knew that bamboo could make a significant impact on carbon emissions and world economies, but only if massive numbers could be produced. And that's just what she and Burr figured out after nine years of experiments—a way to grow millions of plants. By placing sterilized cuttings in test tubes with salts, vitamins, plant hormones, and seaweed gel, they got the plants to sprout and then raised them in soil in greenhouses.

Not long after it cracked the code, Burr's lab hit financial difficulties. Heinricher had no experience running a tissue culture operation, but she wasn't prepared to quit. So she bought the lab. "It was a scary leap," she says. "I went from 5 employees to 55 [including Burr]. I didn't sleep much. Changing hats overnight was a lesson in boot camp management. Sometimes I wonder how I got here."

Oatmeal-Peanut Butter Trail Bars

When you bake your own “energy” bars, you can be assured that they include whole grains like rolled oats and whole wheat flour and healthy fats like canola oil, peanut butter, and walnuts. Peanut butter stands in for butter in these treats, reducing the saturated fat and boosting protein. These bars make ideal snacks—tuck one into your pocket when you head out the door.
Preparation time: 25 minutes
Baking time: 20 to 25 minutes
Makes 24 bars

You Will Need
1/2 cup whole wheat flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup natural-style smooth peanut butter
1/2 cup firmly packed brown sugar
1/3 cup honey
1 large egg
2 large egg whites
2 tablespoons canola oil
2 teaspoons vanilla extract
2 cups old-fashioned rolled oats
1 cup dried cranberries (or raisins)
1/2 cup coarsely chopped walnuts or almonds (2 ounces/60 grams)
1/2 cup bittersweet or semisweet chocolate chips

What to Do
1. Preheat the oven to 350°F (180°C). Coat a 9 x 13-inch (23 x 33-centimeter) baking pan with nonstick spray.

2. Whisk the flour, cinnamon, baking soda, and salt in a medium bowl. Beat the peanut butter, sugar, and honey in a large mixing bowl with an electric mixer until blended. Blend egg and egg whites with a fork in a small bowl. Add to the peanut butter mixture, along with oil and vanilla. Beat until smooth. Add reserved flour mixture and mix with a rubber spatula. Mix in oats, dried cranberries (or raisins), walnuts (or almonds), and chocolate chips. Scrape batter into the prepared baking dish. Use a piece of plastic wrap to spread batter into an even layer.

3. Bake the bars until lightly browned and firm to the touch, 20 to 25 minutes. Let cool completely in the pan on a rack before cutting into 24 bars. One serving is one 2 x 2-inch (5 x 5-centimeter) bar.

Ingredient Note
If you must avoid peanut butter because of an allergy, you can substitute soy nut butter or sunflower seed butter (for tips on adapting recipes to sunflower seed butter . You can replace the nuts with unsalted roasted pepitas (pumpkin seeds) and/or sunflower seeds (look for unsalted seeds in the bulk bins of natural foods stores).

Tip
To avoid wasting the egg yolks, use reconstituted dried egg whites, such as Just Whites, which are available in the baking or natural foods sections of large supermarkets.

1 Way to Cook and Serve the Perfect Turkey

Whether this is your first time roasting a turkey or your fortieth, these hints and tips will help to make it the centerpiece of your best Thanksgiving meal ever.
When you're ready to cook the turkey, locate and remove the giblet bag (save giblets to make Giblet Gravy). Rinse the bird, inside and out, with cold water and pat it dry with paper towels.

Chop your favorite fresh herb -- such as rosemary, sage or tarragon -- and add it to softened sweet butter. To flavor the breast meat, and prevent it from drying out, gently loosen the skin from the flesh (using your fingers to avoid tearing) and pack the herbed butter underneath.

Smooth out the skin with the palm of your hand. Tie the legs together with cotton twine for a prettier presentation at the dinner table. (See: Trussing and Carving a Turkey.)

Cook With Care
Place the turkey, breast-side up, on a roasting rack set in a disposable roasting pan. The rack will keep the turkey from frying in its own juices, and the disposable pan will save on cleanup.

Preheat the oven to 450°F. Brush the outside of the turkey with some vegetable oil and place it in the oven. The oil, along with the high heat, seals in the bird's natural juices. Roast the turkey for 20 minutes, then reduce the temperature to 350°F. Tent a piece of aluminum foil over the breast to prevent excessive browning.

Baste the bird with pan juices or chicken broth every 15 minutes and continue to cook until done (about 10 to 15 minutes per pound). Add an additional 5 minutes per pound if the turkey is stuffed. Sometimes as little as 10 minutes per pound will result in the juiciest turkey.

Do not season the turkey until the last 30 minutes of cooking. Salt draws out moisture, so seasoning toward the end of roasting time will reduce drying.

When the turkey is cooked, its temperature should read 180°F. Do not rely on plastic doneness indicators or leave-in thermometers -- neither are substitutes for instant-read thermometers, which, when inserted into the thigh meat, will take a quick and exact reading. If you don't have a thermometer, make an incision in the skin between the thigh and breast. The juices should run clear with no trace of pink.

When the turkey is done, remove it from the oven and let it sit for at least 15 minutes; this will make it easier to carve. To perfect your carving technique, see Trussing and Carving a Turkey.

Peppermint Health Perks

Not just a breath freshener, this healthy herb can calm stomach pain, gas, and diarrhea, according to an international review study. "Peppermint tea in particular helps soothe indigestion symptoms caused by a bug or irritable bowel syndrome," says Eric Yarnell, assistant professor of botanical medicine at Bastyr University near Seattle. Strong tea is best.
Yarnell recommends steeping two peppermint tea bags in a cup of boiled water for 15 minutes, being sure to keep the brew covered so the essential oils don't evaporate. (You'll see a slight slick of oil on the surface.) Strong mints and even candy canes may help tame an upset stomach, too, as long as you don't have heartburn (peppermint doesn't stop acid backwash).

Angelina Jolie Moved to Tears

The finest actress Angelina Jolie an emotional was moved to tears at a London press conference for her new film 'Changeling' on Monday. But what made her break down?

Unable to truly tap into the essence of the real-life character of Christine Collins, whose son disappeared in 1920s Los Angeles, Angelina says she thought of her late mother in order to connect with the role. But when she began to reflect on Marcheline, she became emotional.

"Everybody called her marshmallow as a joke, because she was just the softest, most gentle woman in the world," said Angelina, moved to tears.

"She is very much Christine Collins," she continued. "She was really sweet and would never get angry; she couldn't swear to save her life. But when it came to her kids, she was really, really fierce, and so this is very much her, and her story, in that she was the woman I relate to, who had that elegance and strength through just knowing what was right."

Angelina's mother died of ovarian cancer in January of last year. In previous interviews, Angelina has said that she kept a picture of her mother in her purse with her on the 'Changeling' set in order to channel her courage.

Samantha Ronson Blasts Flour Ambush on Lindsay Lohan

Hot couple Samantha lashes out at animal rights activists who doused Lindsay with flour outside a Paris nightclub and reveals why she was not left laughing after the prank!

"It seems lately I am learning that there are too many people who put another species before their fellow man and that's sad. I don't wear fur, but I don't think I have the right to ATTACK those who do. No one has that right," wrote Samantha, who accompanied Linday to the nightclub.

The nightclub's owner proceeded to dust Lindsay off before she and Samantha made their way down the red carpet and into the building, the AP said. Be sure to tune in to "Entertainment Tonight" on Monday for our exclusive video of the incident! So sad to hear this..

Paula Abdul's Reported Fan Visited Home Multiple Times

New details on Paula Goodspeed are emerging in the wake of her apparent suicide near Paula Abdul's Los Angeles home. Police are now revealing that Goodspeed had visited the "American Idol" judge's home "on multiple occasions," according to People.com.

"Our station has been called to respond to Paula Abdul's house on multiple occasions over the last several years concerning Ms. Goodspeed," LAPD Capt. James Miller tells the Web site. "The last time our officers had contact with Goodspeed was in July."

"I can't say whether Ms. Abdul was directly harassed," the captain continues. "Ms. Goodspeed had been causing enough of a disturbance [to have police called]." There are reportedly no court records of a restraining order by Abdul against Goodspeed.

Goodspeed was a former "Idol" hopeful who did not pass her audition to go to Hollywood. On her MySpace page she wrote about the apparent backlash of her harsh comments about the judges, saying, "It's very hard reading such awful things being written about yourself.....or hearing things being said..... not like alot of people would understand what it's like having so many haters," she wrote, "just because I made the mistake of trying out for a singing competition before I was even ready vocally, emotionally and physically."

Ellen DeGeneres 'Saddened' By Proposition Passing

My Idol and Talk-show host and comedienne Ellen DeGeneres is getting serious and expressing her disappointment for the passing of a California proposition!

DeGeneres says she is "saddened beyond belief" that California's Proposition 8 passed, a proposition that would ban same-sex marriages, says the Associated Press.

She told the AP Wednesday that although the nation took a huge step forward with the election of Barack Obama as the first African-American president, "we took a giant step away" with the passing of Prop 8.

The comedienne, who reportedly contributed $100,000 to combat the proposition, married actress Portia de Rossi last August after a Supreme Court decision last May legalized same-sex marriages in California. I'm supporting same sex marriage. I believe there is nothing wrong when two people who are in love to get married.

Barack Obama's Historic Victory Speech

My Bet for President and now the first ever African American President in United States of America Barack Obama spoke to an estimated 125,000 supporters at Chicago's Grant Park, giving an historic victory speech after being named the first African-American president-elect of the United States.

"The road ahead will be long. Our climb will be steep. We may not get there in one year or even one term, but America -- I have never been more hopeful than I am tonight that we will get there. I promise you -- we as a people will get there," a celebratory but sober Obama told the crowd.

Obama highlighted the historic nature of his win by telling the story of a 106-year-old African-American voter from Atlanta, Ann Nixon Cooper, who voted in the election after having lived through a time when she did not have the right to vote.

The president-elect appeared onstage with his wife Michelle and daughters Malia, 10 and Sasha, 7. He was also joined onstage by vice president –elect Joe Biden and his family.

In his speech, Obama thanked his wife, saying, "I would not be standing here tonight without the unyielding support of my best friend for the last sixteen years, the rock of our family and the love of my life, our nation's next First Lady, Michelle Obama."

He also thanked his daughters and his late grandmother, Madelyn Dunham, saying he could not have achieved such success without her. The president-elect also thanked former opponent John McCain for his unwavering service to the nation.

"He fought long and hard in this campaign, and he's fought even longer and harder for the country he loves," Obama said of McCain. "He has endured sacrifices for America that most of us cannot begin to imagine, and we are better off for the service rendered by this brave and selfless leader." I hope he will fulfill his promises.

Barack Obama's Tears for His Grandmother

Maybe the next president, Democratic presidential candidate Barack Obama, who announced earlier today that his grandmother, Madelyn Dunham, had passed away, shed tears as he spoke of her tonight at a rally in Florida.

Obama spoke about his personal loss at a Charlotte, North Carolina rally Monday night, telling the crowd his grandmother "has gone home and she died peacefully in her sleep with my sister at her side."

"I'm not going to talk about it long because it's hard to talk about," an emotional Obama said. But he did tell the crowd his grandmother was "one of those quiet heroes we have across America, who aren't famous ... but each and every day they work hard. They look after their families. They look after their children and their grandchildren."

Obama's 86-year-old grandma died only two days before Tuesday's election, which will determine whether her grandson will be the next president of the United States. With my deepest sympathy!
